Slow Cooker Meals: Curry Chicken
Whether I was in Jamaica or at my favorite Jamaican restaurant, the complexity of flavors found in Jamaican cuisine always perplexed me. I could not name the ingredients simply with tasting one bite. Man, I would finish an entire meal only to enjoy the experience without piecing together the flavor puzzle.
I am not one to shy away from challenge. After trying a number of recipes, adding some of this and subtracting some of that, I finally created a recipe that I can give the thumbs up. The regular recipe requires a two step process that begins with making a curry gravy in your pot that requires a watchful eye to ensure your base doesn’t burn (If your gravy burns, you have to start over.). Instead of using a pot and hovering over the stove, I made the curry chicken dish in my Set ‘N Forget slow cooker from Hamilton Beach. Making curry chicken in a slow cooker, takes the complexity out of this tasty Caribbean dish.
4 pounds skinless boneless chicken thighs
2 teaspoons extra virgin olive oil
4 tablespoons curry powder (divide into 2 tablespoons & 2 tablespoons)
1/4 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon ground thyme (or 1 sprig of fresh thyme)
10 to 12 whole allspice pebbles (or 1/2 teaspoon ground allspice)
1 green bell pepper, coarsely chopped
1 red bell pepper, coarsely chopped
1 small yellow onion, coarsely chopped
1 green onion, coarsely chopped
1/4 teaspoon sliced scotch bonnet pepper (optional for some heat; but not too much) NOTE: Handle peppers with care. You will want to wash your hands after handling, if you do not wear gloves.
2 cloves fresh garlic, pressed (or 1/2 tablespoon minced garlic)
1 medium potato, peeled & cut into cubes
ONEMix 2 tablespoons curry powder, salt, black pepper, and garlic powder into a small bowl.
TWOAdd chicken thighs to a large bowl.
THREECoat chicken with oil.
FOUREvenly Season chicken with curry powder, salt, black pepper, and garlic powder mixture.
FIVECover seasoned chicken and put in the refrigerator for at least 4 hours. (I prefer overnight.)
SIXPlace green bell pepper, red bell pepper, yellow onion, green onion, scotch bonnet pepper, fresh garlic, 2 tablespoons curry powder, thyme, and all spice to food processor or blender.
SEVENBlend mixture until it is fine.
EIGHTAdd seasoned chicken and blended seasoned vegetables to slow cooker.
NINEAdd potatoes & stir the mixture until thoroughly combined.
TENCook on LOW setting for 7 hours.
ELEVENServe with your favorite rice.
