The Best of Both Worlds: Buffalo Chicken Pizza
Why should I eat buffalo chicken wings and pizza separately? I shouldn’t and I didn’t. When I found the extra large pita/Lebanese bread in a local produce market, the wheels began to spin. I know I live in a city where restaurants sell amazing pizza in abundance. Today, I wanted to try my hand at making a not so typical pizza. With a spicy sauce, fresh basil, smoked mozzarella, blue cheese crumbles, and well seasoned chicken, my vision became a reality.
The great thing about making your own pizza is that you can put as much of your favorite ingredient on the pizza as you wish. Also, I like to eat the edges. The edges always taste better when you take the sauce and cheese to the edge. I spread cheese and sauce as close to the edge as I could. I was eager to place the pizza in the oven after I assembled it.
I baked the pizza until the cheese was all melted.
After taking my first bite of this cheesy goodness, I was happy that I stepped outside of the pizza making box.
1 large Whole Wheat Pita or Lebanese Bread (approximately 10 inches in diameter)
2 cup shredded Smoked Mozzarella
¼ cup Blue Cheese Crumbles
1 cooked Chicken Breast (recipe below)
¼ chopped fresh Basil Leaves
1 cup Spicy Pizza Sauce (recipe below)
For Chicken Breast:
1 Skinless Boneless Chicken Breast
Cracked Black Pepper
Trader Joe’s South African Smoked Seasoning Blend
Red Pepper Flakes
¼ cup Extra Virgin Olive Oil
ONESeason both sides of the Skinless Boneless Chicken Breast with the dry seasonings listed for Chicken Breast.
TWOPour Extra Virgin Olive Oil over Chicken Breast. Ensure Oil is coated on both sides.
THREEAllow to marinate for at least 4 hours.
FOURCook in skillet with top on for about 20 minutes until Chicken Breast is thoroughly cooked. NOTEBe sure not to overcook the Chicken Breast.
½ cup Ketchup
½ cup Srirarcha Hot Chili Sauce
ONEMix Ketchup and Srirarcha Hot Chili Sauce. Mix well.
NOTESriarcha Hot Chili Sauce is spicy. Use whatever combination of Ketchup and Sriracha Hot Chili Sauce your heat tolerance can take.
NOTEPlace Whole Wheat Pita Bread on either pizza pan, aluminum foil, or baking sheet. The thinner the pan, the crisper the crust.
ONEBrush Whole Wheat Pita Bread with Extra Virgin Olive Oil.
TWOSpread Sauce mixture over Whole Wheat Pita Bread. Carry to edges.
THREECover pizza with fresh chopped Basil.
FOURAdd cooked chopped Chicken Breast.
FIVECover with shredded Smoked Mozzarella.
SIXSprinkle with Blue Cheese Crumbles.
SEVENBake for 15 minutes at 425 degrees or until cheese is fully melted.
